Chianti Classico

Chianti wine is an invention of nature and culture of the best known and loved Italian region around the world. The beauty, the history, the feelings, the unique flavors of Tuscany are found in this wine which is one of the first symbols of the "made in Italy".

Chianti is a bright ruby red wine, tending to garnet with aging. With harmonious flavor, dry, fruity, slightly tannic, intensely vinous aroma, sometimes with hints of violet. The Chianti can be consumed, for some types, like a young wine, fresh and palatable, but it is also well known, in several areas, his vocation to a medium and long aging, whereby matures color, aroma and unmistakable flavor.In addition, the soft pressing, fermentation at the right temperature, the evolution in prestigious woods, the aging in glass, adds personality to the wine: kinder and round in flavor, more complex scents, more intense in color. In the huge production area of Chianti are present for centuries the same grape varieties:Sangiovese first of all,and other ones that can be added in smaller proportions, but always grown in the territory. The combination of grape varieties and the character, the body and the scents that soils, altitudes and different microclimates transmit to the grapes, give life to the Chianti Wine Denomination of Controlled and Guaranteed Origin.

Since 1927 the Consorzio Vino Chianti deals the capacity and quality . Its checks concern the entire production cycle - from the selection of grapes, the wine making process, verification of the chemical, physical and organoleptic features until the bottling - and fidelity to the criteria imposed in 1967 by d.o.c. and d.o.c.g., that was recognized in 1984.

PRODUCTION
: The grape is Sangiovese from 80% up to 100%. The vineyards in production are in the provinces of Arezzo, Florence, Pisa, Pistoia, Prato and Siena. The maximum yield per hectare is 75 quintals per hectare, 3 kilograms per plant. The maximum yield of grapes into the wine must not be greater than 70%;

WINE MAKING: the process has a run of one year, and the specification states that the wine-making operations, storage and bottling must take place exclusively inside the production area and  releasing for consumption is permitted from 1 October following the harvest. For the Reserve there is a mandatory minimum aging of 24 months, of which at least 3 of aging in bottle.

BOTTLING: must only be located in the production area.

MARKETING: The wine D.O.C.G. may be released for consumption only in containers up to a maximum of 6 liters, using a governmental mark as a closing seal thatattests the certification.

Present with a percentage of a minimum of 80% can be as high as 100%, Sangiovese is the real soul of Chianti Classico. Whether regardless of climate or soil, the Sangiovese grape is very sensitive to external factors and it's really hard to find another vine that knows so well to interpret the characteristics of the soil and change their scents depending on the terrain where it was born. Thus, a floral bouquet refers to the sandstones, the aroma of berries  to the limestone and fresh tobacco aroma to the tuff, but always, whatever  be the original area, you must find the scent of violets that the discipline production code identifies as a characteristic and specific element of Chianti Classico.
