Sassicaia

In the early forties the Marquis Mario Incisa della Rocchetta, great expert of horses and a great lover of French wines, imported from the Dukes Salviati a Migliarino held some cuttings of cabernet sauvignon and cabernet franc. The decision to plant these vines was partly due to the morphological similarity that he had noticed between the sending area called Graves, Bordeaux, and the one where he later brought up the vines. And so it was that the Marquis planted the vines in the San Guido estate in the Maremma of Livorno, he had great care and in 1944 he obtained the first bottles of Sassicaia. The wine was produced, initially for the exclusive family use, in contrast with the production standards of those times that tended to favor quantity to quality. The first vintage was marketed in 1968.

At the end of 2013, with the publication of the decree by the Mipaaf, Sassicaia became detached from Bolgheri DOC (of which he was subzone until 1994, the year of birth of the DOC) and became an independent DOC. This last step completes the journey that began as a simple table wine, then wine IGT, DOC subzone and, finally, the DOC of its own.

Sassicaia holds a record: it is the first (and so far only) Italian wine from a specific cellar that, as happens in France for a few other famous wines, has a DOC specially reserved for itself. In fact, the name Bolgheri Sassicaia can only be used by Tenuta San Guido (owned by Incisa della Rocchetta family) for its corresponding wine (because it is a cru Sassicaia in Bolgheri wholly owned by Tenuta San Guido).

Sassicaia is a DOC wine whose production is allowed in a specific area of ​​the municipality of Castagneto Carducci, produced with at least 80% of Cabernet Sauvignon. The Bolgheri Sassicaia is one of the finest and expensive Italian wines and it is exclusively produced by the Tenuta San Guido, who owns all the vineyards in the area bounded by the DOC.

the wine must carry out two years of aging from 1 January following the harvest, of which at least 18 months in 225 liters.

Food wine pairings

Particularly suitable for foods with intense flavor and products from hunting, especially the roasted pigeon, the fillets to the mixture, the cheese flavor. Also it recommended the simple pairing with some walnut kernels and raw porcini mushrooms, seasoned only with a few drops of olive oil and some intense herbs from the Mediterranean clime.
